photo 2This is the perfect comfort food. I used to be a bread face, I was addicted! I needed to find a healthy substitute. And this is the winner!! This recipe is adapted from “My New Roots” and trust me on this one, it is delicious and so easy to make!

This loaf is packed full of nutrients and healthy ingredients. This bread is gluten free and fibre filled helping your body stay regular! This bread does not contain flour but rather the secret ingredient known as Psyllium Husks. Pysllium Husks is known to be an over the counter laxative keeping your insides very happy with its cleansing actions! Psyllium husks contain both soluble and insoluble fiber meaning that is both cleanses the digestive tract as well as soothes it. This ingredient is what binds everything together to keep all of the ingredients in tact. Without it this would be one big mess!

This loaf is amazing toasted with butter or my favourite…honey! This is by far the best bread alternative I have ever had. So here’s what you need…

Ingredients:

1 cup of sunflower seeds

½ cup of flax seeds

½ cup of chopped almonds of walnuts

1 ½ cups / 145g rolled oats
 (gluten free)

2 Tbsp. chia seeds

3 Tbsp. of psyllium husk powder

1 tsp. of sea salt

1 cup of wild blueberries (can also use dried cranberries or blueberries)

1 Tbsp. maple syrup (for sugar-free diets, use a pinch of stevia)

3 Tbsp. melted coconut oil

1 ½ cups / 350ml water

Directions:

  1. In a blow mix all of the dry ingredientsphoto 1
  2. In a separate bowel mix wet ingredients together (maple syrup, oil and water)
  3. Combine wet and dry ingredients
  4. Mix together well
  5. Pour into a flexible load pan and smooth out the top
  6. Let this sit on the counter for a minimum of 2 hours -12 hours
  7. Preheat over to 350° F
  8. Place pan on middle rack for 20 minutes
  9. Remove loaf from pan and place upside down on the rack for 35 minutes

This bread lasts for up to 5 days and can also be frozen
