Thanks to my lovely mom I bring you a new delicious crunchy chickpea recipe. She is a wizard in the kitchen! This recipe will keep you from reaching for that chip bag! My love for chips is actually just a love for a salty crunchy snack, and this is just that!! You can make these in no time and you will be hooked. Plus this wonderful legume is protein packed and nutritious.
Ingredients:
- 15-oz can or organic chickpeas (garbanzo beans)
- 1 tablespoon or raw honey
- ½ tablespoon or extra virgin olive oil
- ½ teaspoon of cinnamon
- Dash of sea salt to your liking (I use about 1/8 of a teaspoon)
Instructions:
- Preheat your over to 375 degrees Fahrenheit
- Grab a baking sheet and line with parchment paper
- Rinse your chickpeas well with cold water in a colander
- Toss chickpeas in a bowl with the above ingredients
- Place the chickpeas on paper towel to dry off
- Spread the chickpeas on your baking sheet
- Bake for approximately 30-35 minutes (or until crispy)- stirring and checking them often as they can burn very quickly!! (Lesson learned)
- Transfer them to bowl, sprinkle with more spices if you like!
