photo 5Not sure what to do with the last of your strawberries? I have just the thing for you! To continue with my chia obsession- I present to you chia seed strawberry jam!!

This recipe is adapted from one of my favourite cookbooks “Oh She Glows”. I can’t express how easy this is to make- so just give it a try and find out for yourself! Spread this delicious jam on some gluten free bread and you have a perfect snack. Who thought jam could actually be healthy?? This jam is jam packed with so many nutrients including: fibre, magnesium, omega 3 fatty acids, protein, iron and calcium.

Ingredients:

  • 3 cups of fresh or frozen strawberries (can also use blueberries or raspberries)
  • 4 tablespoons on natural maple syrup
  • 2 tablespoons of chia seeds
  • 1 teaspoon of pure vanilla extract

Directions:

  • Put sauce pan on medium heatphoto 1
  • Combine berries and maple syrup, bring to a simmer over medium heat while stirring frequently
  • Reduce heat to medium-low and let simmer for 5 minutes
  • Mash the berries with a fork- leaving some larger chunks
  • Stir in chia seeds until mixed for approximately 15 minutes or until desired consistency
  • Once the jam has reached your desired consistency, remove the pan from heat and stir in vanilla extract

Enjoy this deliciousness on anything from bread, oatmeal, or yogurt. Store in the fridge in a mason jar or airtight container. This will thicken up as it cools; can keep in the fridge for 1-2 weeks.
