Yummm- this is one of my go-to snacks, especially for those days when I am craving something sweet. This stops me from grabbing the unhealthy stuff. These little chia protein balls are very convenient when I am travelling and there is nowhere to purchase healthy snacks. They have saved me from buying junk on numerous occasions!
This recipe gets requested frequently! Each time I make these balls they vary slightly- I never paid much attention to the amount of ingredients I was putting in, just threw everything together and they always came out delicious. But I wanted to share this recipe with you guys so I finally took note. They are very simple to make, so here you go…..
- 1 tbsp. of coconut oil
- 3 tbsp. of almond butter
- 1 cup of gluten-free rolled oats
- 1 tbsp. protein powder (I use vanilla)
- 2 tbsp. of unsweetened coconut flakes
- 3 tbsp. of chia seeds
- 2 tbsp. of organic dark chocolate chips
- 1/4 cup of maple syrup
Instructions:
Doesn’t get much easier….
- Combine all of the ingredients (the order doesn’t matter)
- Roll into 1-inch balls (this recipe yields around 12-15 balls)
- Place on a baking sheet and put in the fridge for a few hours or overnight
Enjoy these with your smoothie for breakfast or a healthy snack!! You can also put these in the freezer to keep longer…. I have to admit, mine have never made it there- they never last that long!
If you don’t have all of the ingredients listed above no problem! Make your own version, add or remove ingredients of your choice.
