Who doesn’t love a good muffin?? Well now you can enjoy them with out those bad ingredients… added sugar, dairy, gluten and all that yucky stuff. This modified muffin recipe is both gluten free, dairy free and packed with protein!! Making them satisfying and soooo delicious!!
This recipe is my new obsession, makes for a great breakfast or snack. Wheat based foods (gluten) are a very common food intolerance for many people which results in unwanted health issues. Although I am not completely gluten free I try to avoid it when possible.
So instead of using wheat flour for this recipe, almond flour is used. This is a great source of healthy “good” fat.
Now get baking!
Ingredients:
- 2 ½ cups of almond flour
- ¼ cup of melted coconut oil (make sure it is organic)
- ¼ cup of maple syrup
- 1 cup of unsweetened applesauce
- ½ tsp of baking soda
- 1 tsp of cinnamon
- 3 eggs
- A touch of sea salt
- ½ cup of chocolate cups
Directions
- Combine all ingredients in a large mixing bowel
- Line muffin tin with muffin cups
- Fill cups half way with batter
- Bake at 350 degrees for 18-20 minutes
Makes 12 muffins per batch
