Eliminate those store bought “junk food” cookies and replace them with this much healthier version! They are; raw, vegan, gluten free, and still so tasty!
I have to admit I was a little nervous when I first made them. I was unsure of the fact that they were going to be raw. But I needed to switch things up as I have been making a lot of my favourite Chia Protein Balls.
You can flatten these into cookies, or if you find them crumbly, roll them into balls.
Ingredients:
- 1 cup of almond flour
- 1/2 cup of organic peanut butter (or nut butter of choice)
- 1 cup of pitted dates
- Pinch of sea salt
- 1 tablespoon of vanilla extract
- Add all of the above ingredients to a food processor or high powered blender like the Vitamix (depending on the powder or your food processor it might be a good idea to chop your dates up finely)
- Process for 1-2 minutes until you see the ingredients form into a dough like texture
- Roll into 2 inch balls, you can either leave them in ball form or squish with a fork to turn them into cookies- store in refrigerator
